The meal prep (or meal assembly) industry has grown rapidly.  According to EasyMealPrep.com, the industry grew from 566 meal preparation outlets at the beginning of 2006 to over 1400 at the end of 2007.

It's no wonder this new industry is growing so quickly, with new stores and new franchises popping up everywhere around the world.  You just need to read the statistics to see why it is growing:

• According to the National Restaurant Association, Americans are expected to spend more than half their food dollars at an anticipated 1 million eating-and-drinking places by 2010.
   
• According to a 2005 national survey commissioned by ConAgra Foods, more than 70 percent of parents experience some type of stress associated with dinnertime. The survey reveals that 47 percent of the stress comes from deciding what to make, 23 percent from preparing and cooking the meal, and 8 percent from worrying about having the right ingredients.
   
• According to Tufts University research, about 80 percent of Americans say eating dinner with their children is very important, and yet, less than half of those who said so actually do so nightly.
